Information on what we didn't see has been in short supply since series 3, after which Talkback banned candidates from discussing the show on the internet until a month after the final has been broadcast. However, occasionally some information emerges.
Episode 2: Corporate Catering
The 'city slickers' being fed by Yasmina and her team were actually graduate trainees for Price Waterhouse Coopers, at an evening reception organised by the company.
Episode 3: Design Exercise Equipment
The company that makes the prototypes is called DesignWorks.
The prototype of the 'Bingo Buster' -- the equipment devised by James's team, the eventual losers -- was not fully functional; the design was too complicated for DesignWorks to get it finished in one night. Source: Interview with DesignWorks
Fremantle Media Ltd apparently liked the Body Rocka so much that they may well manufacture and sell it. Source: Intellectual Property Office trademarks website -- Body Rocka is now a registered trademark. The domain name bodyrocka.co.uk has also been registered.
Episode 4: Invent and Sell Cosmetics
The cosmetics were labelled with an imminent sell-by date -- either the day that the teams were selling, or the following day.
Episode 5: Cereal Marketing
Kimberly's team spent most of the first day discussing a concept put forward by Kimberly herself, only to be told late in the day by Production that they couldn't use it. (Reason unknown, but may well be trademark or copyright issues). Therefore they had to come up with a new idea very fast -- Pantsman was the result. None of this was revealed in the episode. This would also account for their lack of time to visit the graphic designer (or rather, to re-visit him; note that he said on the phone, "Are you coming back?", when there was no evidence on the show that they had been there yet).

Week 8: Re-branding Margate
There was a great deal that we didn't see in this episode. Indeed, the episode itself may even have been put together rather late in the day, given that some quotations from the task that were 'leaked' to a newspaper a few weeks beforehand weren't included in the broadcast episode. The most likely explanation is that one or more comments made throughout the broadcast - including in the Boardroom - were construed as anti-gay, and the BBC chickened out chose not to broadcast them.
What we didn't see:
The themes that the teams chose were probably chosen from a list of possible themes provided by the production team. If so, this would explain why the winning team were not castigated for choosing a 'family' theme that didn't really 're-brand' Margate.

Mona said she would not feel comfortable letting a homosexual man meet her young son.
She also asked Howard: "Do gays like bowling?" leaving Howard 'stunned and upset'
Other Apprentices stepped in to tell her her remarks were totally unacceptable.

Mona briefly saw Chloe the transsexual the day after her infamous encounter
with him/her in the gay bar. Chloe asked Mona to go for a drink, so probably wasn't too offended by Mona's behaviour the previous evening.
